Eating on a Budget, Meal Plans

I was asked to put together some recipes for those who are single and on a tight budget, so I picked up $30 in groceries and got to cooking. These recipes are great for families and couples too! I think you’ll be surprised with what I ended up making and I hope you love the recipes!

Groceries

For this grocery trip, I shopped at ALDI, but I recommend finding the least expensive grocery store near you. Some of these ingredients may already be in your pantry or refrigerator, so be sure to check before heading out on your shopping trip.

To make things a little easier, here is the written grocery list. You may notice in the photo above that I’ve got orange juice and cumin. These are items I simply needed that week and are not included in the recipes or grocery list.

This bagel recipe is new to me and I was SO excited by how they turned out. I think you’ll love this one! If you’ve seen some of my other meal plans, you may have seen me turn Greek yogurt and flour into bagels. Well this time, I’m doing something very similar with cottage cheese.

Cottage Cheese Bagels

Ingredients

  • 1 cup Cottage Cheese
  • 1 cup All Purpose Flour about 5 oz
  • 2 tsp Baking Powder
  • ½ tsp Salt
  • 1 Egg beaten

Instructions

  • Preheat oven to 375° F and line a baking sheet with parchment paper.

  • In a mixing bowl, mix together the cottage cheese, flour, baking powder, and salt until combined. It should resemble pebbles but not be cohesive.

  • Using your hands, work the dough together until it’s completely combined and no longer sticks to the bowl. The dough shouldn’t be sticky – add about a tablespoon or two of flour if needed until dough no longer sticks to your hands.

  • Separate the dough into 4 equal pieces, roll into a ball, and then poke a hole in the middle with your thumb. Stretch the hole gently until the dough resembles a bagel.

  • Place on the parchment lined baking sheet and brush each bagel with egg. Bake at 375° F for 25-30 minutes or until golden brown and cooked through.

  • Remove from the oven and allow bagels to rest for at least 25 minutes before slicing to ensure they are fully cooked through. Serve and enjoy!

I purchased enough cream cheese for these bagels but I also had egg bagel sandwiches too. Simply scramble an egg or two, place it on top of a toasted bagel, then top with cheese, spinach, and any other toppings you love.

This week, I decided to make homemade tortillas. I wanted to show one way to save a little money by using what you likely already have on hand, but it is by no means necessary. If you don’t have the ingredients or simply don’t have the time to make them from scratch, you should be able to find a pack of 10 tortillas for less than $2, depending on your location.

Tortillas

Instructions

  • In a large mixing bowl, mix together flour and salt until combined. Add water and olive oil and mix until a dough forms.

  • Turn the dough out onto a floured surface and knead about 10 times. Let the dough rest for 10 minutes.

  • Cut dough into 8 equal pieces. Roll each piece into 8-10 inch circles.

  • In a non-stick or greased skillet, cook tortillas over medium heat until lightly browned and bubbles form. Flip and brown on the other side. Serve or store in an airtight container in the refrigerator.

*This recipe makes 8. I made 4 times this recipe to make 32 tortillas.

I used these tortillas for two separate recipes this week. The first recipe is this fun viral tortilla foldover! You may have seen this idea on social media and it was a fun way to mix things up. I highly recommend giving it a try!

Breakfast Tortilla Foldovers

Ingredients

  • 1 large Flour Tortilla
  • 1 Egg scrambled
  • ½ Avocado smashed
  • 2 Tbsp Mozzarella Cheese shredded
  • Spinach
  • 1 Tbsp Butter

Instructions

  • Place the tortilla on a cutting board and cut with a knife or pizza cutter half way up, to create a slit.

  • Place cheese in the bottom left quadrant of the tortilla, next to the slit. Place the scrambled eggs on the bottom right quadrant, then the avocado on the top right, and finally the spinach on the top left.

  • Begin folding your tortilla by folding the eggs onto the avocado, then folding over onto the spinach, and then finally folding again onto the cheese.

  • In a medium pan, melt butter. Place the tortilla foldover with the cheese side down and cook until golden brown and crispy. Flip and brown on the other side. Serve and enjoy!

These next dinners are great made as freezer meals or to be served immediately. They’re also easy to portion for a single person and also have for leftovers for lunch the next day.

Lasagna Roll-Ups

Ingredients

  • 1 jar 24oz Pasta Sauce
  • 6 Lasagna Noodles
  • 2 cups Cottage Cheese
  • ½ cup Parmesan Cheese
  • 1 Egg
  • 1 tsp Dried Parsley
  • ½ tsp Salt
  • ¼ tsp Pepper
  • ½ cup Mozzarella shredded

Instructions

  • Preheat the oven to 350° and line a baking sheet with parchment paper.

  • Pour ½ cup of pasta sauce on the bottom of a casserole dish and spread evenly to cover the entire bottom.

  • Bring a large pot of water to boil, add salt to taste, and cook noodles as directed on the packaging. Once cooked, remove from the water and lay them on the parchment lined baking sheet.

  • Meanwhile, in a mixing bowl, mix together the cottage cheese, Parmesan, egg, parsley, salt, and pepper until completely combined.

  • Spoon about 2-3 tablespoons of the mixture onto each cooked noodle, spreading to cover. Then carefully roll each on and place in the casserole dish, seam side down. Continue until all noodles are rolled up.

  • Top with remaining pasta sauce and mozzarella. Cover with foil and bake at 350° for 45-50 minutes or until cheese is melty and sauce is bubbly.

  • Serve and enjoy!

Notes

This recipe makes a great freezer meal. To freeze, simply follow the directions up to step 6 and freeze instead of baking. When ready to eat, thaw for 24 hours in the refrigerator and then proceed to bake.

I recommend serving the Lasagna Roll-ups and the next Lasagna Soup recipe with a side spinach salad, using the fresh spinach and any dressing you like. I love making a quick balsamic vinaigrette with things from my pantry. If you don’t have any dressing and can’t make one from scratch, simply sauté the spinach in olive oil and salt and pepper, then serve topped with parmesan cheese.

Balsamic Vinaigrette

Ingredients

  • 1/4 cup Balsamic Vinegar
  • 1/2 up to 3/4 cup Extra Virgin Olive Oil
  • 2 Tbsp Honey
  • 1 Tbsp Dijon Mustard
  • Fresh Cracked Black Pepper to taste
  • Fine Sea Salt to taste

Instructions

  • Put all ingredients in a small mixing bowl or jar and stir (or shake) until completely combined and emulsified.

  • Store covered in the refrigerator for up to 4 days. Shake before using.

Lasagna Soup

Ingredients

  • Olive oil or Avocado Oil
  • 1 yellow onion diced
  • 1 lb Sausage or any ground meat or meat substitute
  • 1 tsp Italian Seasoning
  • 1 jar 24oz Pasta Sauce or Marinara sauce
  • 3 cups Chicken Stock or 3 cups Water with 2 Tbsp Soy Sauce
  • 6 Lasagna Noodles broken
  • 1/2 cup Parmesan finely grated
  • 1 oz 2 Tbsp Cream Cheese (or 1 Cup Mozzarella Cheese, shredded)

Instructions

  • In a large sauté pan, heat olive oil over medium heat. Add onions and sauté until soft and translucent, about 3-4 minutes.

  • Add sausage (or ground meat or meat substitute). Brown the meat, breaking apart as you cook, until cooked through.

  • Add pasta sauce, Italian seasoning, and chicken stock and heat until bubbly.

  • Add noodles and cook as directed on the package. (I cooked for 12 minutes for oven-ready lasagna noodles)

  • Add Parmesan and cream cheese (or mozzarella), stir until melted.

  • Serve immediately and enjoy

Sofritas Tortilla Casserole

Ingredients

  • Oil
  • 14 oz Tofu
  • 14 oz Enchilada Sauce
  • 5 Flour Tortillas 8-10 inches in size
  • 2 cups 8 oz Mozzarella Cheese, shredded
  • 1 Avocado
  • Greek Yogurt for garnish
  • Hot Sauce optional, for garnish

Instructions

  • Preheat oven to 375°. Press the tofu using a towel and a large cutting board or cast iron skillet to remove some of the moisture.

  • In a large skillet, heat oil over medium heat. Once oil is hot, add pressed tofu and cook until browned and golden. Flip and continue cooking, breaking apart to create smaller pieces.

  • Add ½ cup enchilada sauce to the pan and stir until tofu is coated. Continue to cook until tofu is browned and crispy. Remove from the heat and set aside.

  • In an 8×10 baking dish, spoon ¼ cup of the enchilada sauce and spread evenly on the bottom. Place 2 tortillas on the bottom, overlapping if needed. Top with half of the tofu, then ⅓ of the remaining sauce, and ⅓ of the mozzarella cheese.

  • Continue with the next layer. Add 2 tortillas on top, then the remaining tofu, ½ of the remaining sauce, and ½ of the remaining mozzarella. Then cover with the remaining tortilla and top with remaining enchilada sauce and mozzarella cheese.

  • Cover with foil, being careful that the foil doesn’t touch the cheese, and bake for 25 minutes at 375° F. Remove the foil and bake for an additional 5-10 minutes or until cheese is golden and sauce is bubbly.

  • Serve with a side of black beans, avocado, Greek yogurt, and hot sauce, if desired. Enjoy!

I served the above dinner with a side of undrained canned black beans sautéed in onions and garlic until reduced and creamy, about 15 minutes. I also added some avocado on the side for freshness.
